When I was in the hospital after giving birth to Peanut my mom went to a nearby grocery store to grab some groceries. While there she picked up some tiny tarts. They were each only a couple of inches across so she bought a few and cut them in half so we could each try them all. One we both really liked was a lemon tart with blueberries on it.
I’ve been thinking about that yummy little tart recently and got really excited when I noticed blueberries on sale at the grocery store this week. I bought a carton along with some lemons and thought I’d give the tart a try later this week.
Today was the day. Even though the original had a regular crust I decided to make a graham cracker crust because I thought it would be a nice contrast to the tangy sourness of the lemon. Plus, graham cracker crusts are just yummy. I considered making a lemon curd for the filling but after talking to my mom I decided to go for the same filling we use in lemon meringue pies. After I poured the filling into the crust I sprinkled the blueberries over the top. We had it for dessert tonight and I had to have a second slice, it was so good. Mmmmm. What a lovely thing on an otherwise mundane day.
Wingnut made a grab for it while I was taking a photo and buried a few of the blueberries in the filling while coming away with a fist full of gooey, lemony goodness. He must have known it would be tasty.

I ALWAYS change most of my pie crusts to graham……it’s just better! Your tart/pie looks absolutely fabulous and it literally made my tummy growl!
