Tracy wanted the recipe for Chunky Cheesy Crock Pot Chicken so here it is. Sorry, no pic. It isn’t like it looks really pretty anyway. It just tastes good. I did get a picture of the strawberry salad I made today, though, so I’m posting that recipe, too. Enjoy!
Chunky Cheesy Crock Pot Chicken
- 6 Boneless skinless chicken breasts – chunked (cut in cubes)
- 1 Stick butter – melted
- ½ package Dry Italian dressing mix
Place chicken in crock pot and top with butter and dressing mix. Cook on low for 4 hours.
Add:
- 8 oz package Cream cheese – chunked
- 1 can Cream of chicken soup
Continue cooking in crock pot on low stirring occasionally until everything melts together, usually about 1/2 hour. Serve over rice.

Aunt C’s Yummy Strawberry Salad
- 1 Head lettuce – torn
- 1 Head spinach – torn
- 1 cup Mozzarella – grated
- Crazins
- Honey roasted peanuts
- 1 can Mandarin oranges – drained
- 1 carton Strawberries – sliced – can use fresh peaches, apples, pears, asian pears, etc.
- Brianna’s poppyseed dressing
Combine everything in a large bowl and toss with dressing before serving.








I must make that chicken thing SOON. It sounds soooooo yummy. Fattening but YUMMY.
Oh, I’m so glad you posted that salad recipe. I’d never had it, and suddenly, I ate it twice this weekend (restaurant and at the wedding). It was so yummy, I wanted to know how to make it. Now I do! Thanks! I can’t wait to make it myself.
WOMAN! One *stick* of butter? One STICK! And then eight ounces of cream cheese? The “chunky” in the title clearly refers to the chunks that form in your arteries.

Oh yum. I do love strawberry salads! And that’s quite the chicken recipe! Sounds like definite comfort food. I’ll have to try it.
Ok, wait a minute. I made Chunky Cheesy Crockpot Chicken for dinner yesterday. I used 1/2 stick butter and light cream cheese. It was still good and cut the fat and calories by quite a bit, so try it that way. Goodness! I hadn’t made this for quite a while, and I had forgotten how rich and fattening it is! Yikes!
