It’s been a little overcast and chilly here the last few days, but I’ve been dying to have more of the the Fresh Pressed Lemon with Mint that I had at Ti Couz the other day. I tried to recreate it today and here’s what I came up with.
At the restaurant they served it by the glass, but I decided to make a pitcher so I could have lots.
For a big pitcher I juiced 8 large lemons right into the pitcher. I made a simple syrup (dissolve 1 part sugar to 2 parts water in a saucepan and let cool) and added about 1 1/3 C. of it to the lemon juice. I tore about one and a half handfuls of fresh mint and added that to the mix. I filled the pitcher the rest of the way with cold water and a few ice cubes, and stirred. Yum! Peanut enjoyed a little in her sippy cup, too. She sucked it down fast. I like mine on the tart side so this is just a little jumping off point if you want to try it at home. I think I may end making this all summer long. Enjoy!

That sounds so yum. I’ve never had mint in my drink before…I’m so in the dark.
I never thought of mint either but it looks really good and refreshing. The restaurant that I work at makes lemonade a lot like this and they are awesome, I bet yours are even better. If you drink soda you might try putting a little sprite or 7up in it to give it a kick.
Sounds wonderful! Homemade lemonade is my favorite summer beverage. It reminds me of my great-grandmother and her lemon tree
Wow! That looks delightful! I will definately need to try this…do you think honey could be substituted for the sugar?
@ Tia,
Ooh! I really want to try it with Sprite now.
@ WB,
I think that could totally work. Let me know how it goes.
Yummy! That’s sounds so good right now.
hsf, is that like a mojito? we went to a vietnamese restaurant a couple of weeks ago and got raspberry mojitos that were sooo good. i’ve never had one until then but it had quite a bit of mint in it. i wonder if they’re similar..
