This is a recipe my family has on Christmas morning each year but I like it so much I make it for dinner year round. It’s yummy! I made it for dinner tonight.

Christmas Casserole
- 24 oz. Frozen hash browns
- 1/2 C. Butter, melted
- 3 Beaten eggs
- 1C. Half and half
- 1/2 tsp. Seasoned Salt
- 1C. Grated Swiss cheese
- 1C. Grated cheddar cheese
- 1C. Diced ham or cooked, crumbled bacon
Put frozen hash browns into a 9×13 inch pan. Pour melted butter over. Bake for 20 minutes at 375*. Combine remaining ingredients in a large bowl. Pure on top of potatoes and mix. Return pan to oven and cook another 40 minutes.
When serving I like to top it with sour cream and salsa (homemade if possible) and a couple of slices of avocados. Yum!

Oh, YUM!!! I haven’t made Christmas Casserole in a really long time! I’ll have to do that soon. How did you get so smart to think of putting yummy stuff on top? You’re such a very clever girl!

You are an answer to prayer. I recently cleaned out my freezer, but kept the frozen hashbrowns in the hope that I would come up with a brillant way to use them and then, you in your kindness, post this wonderful recipe. My family thanks you ahead of time for a few and far between homecooked meal.

Oh, mmmmmmmmm. Yum!! If it wasn’t so flippin hot here, I would totally turn on my oven for that. Scrumptious.
